Vegetable Preserves & Sauces

When siblings Edoardo, Emanuele and Gianna chose a life on the land, their parents had hoped for something different. But their grandfather's caper fields had already shown them the way. In 2003 they founded their own farm in Salento, at the southern tip of Puglia, reviving the old tradition of drying tomatoes in the sun. Today they grow more than 50 vegetables and preserve each one by hand.

Salento is the heel of Italy's boot, a sun-drenched peninsula framed by two seas, where red soil, sea breezes and long summers give vegetables remarkable depth of flavor. In 2008 the family took on an abandoned plot of land overlooking the sea near Ugento and brought it back to life. That garden remains the heart of the farm, and everything is grown there, harvested at its peak and preserved just steps away.

From Field to Jar in Hours

Every step, from planting to harvest to filling each jar, is done by hand by people from the local community. Vegetables are preserved within hours of being picked, using only time-honored ingredients like salt, vinegar and lemon, with no added preservatives. Each summer, rows of red drying racks fill the farm as tomatoes slowly turn sweet and concentrated under the sun.

Rooted in Respect for the Land

The farm grows only seasonal vegetables and follows integrated farming practices, crop rotation and careful water use, with production powered by solar energy. Its signature clear glass jars reflect the family's belief in transparency: you can see exactly what's inside, with nothing to hide.

Spoon sun-dried tomatoes over warm bread, toss grilled vegetables into pasta or set out an antipasto board for friends. Each jar brings the flavors of a seaside garden to your table, and it makes a thoughtful gift for anyone who loves to cook.
